A 3.0 would be perfect. It runs the Mercedes/Chrysler Sprinter vans all day long.
It think the Sprinter runs the 2.7 engine. Its from the same family as the 3.0. Still comparing most brands 3.0 motors I think 240 hp and 390 lbs is about right and that is plenty for a half ton and fleet use vehicles. With better aerodynamics I'd fully expect a 1/2 ton to be in the mid 20's (maybe 24-25 ish) with city edging on 20 mpg. I could live with that considering my 2001 Mitsubishi Galant (wife's hand-me down) gets 21 combined for me.
